Quarks are particles which play an essential role in the strong nuclear force which is one of the 4 fundamental forces in our universe

Gluons are subatomic particles that also play an essential role in the strong nuclear force , as even gluon has contributed in the created of protons and neutrons

Creation of strong nuclear force

lets zoom deep inside a proton where we can see a 3 quark pair. from one quark when it emits a gluon it travels in the speed of light cause its a massless particle. When it get absorbed by the other there is a small reaction formed which is the strong nuclear force 

Asymptotic freedom process

When the process happens constantly the force reacts on the quarks which makes a quark expand and break. When it breaks the quark also breaks to half. An half joins back the 3 quark pair while other one becomes a meson.
